May 28 — in the French city of Mahon, when the English occupied French lands during the Seven Years’ War (1756–1763), mayonnaise was invented.

In the French forces of Marshal Louis François Armand du Plessis, Duke of Richelieu, a serious supply problem arose: only vegetable oil, eggs, and lemons remained. Since daily omelets had already become tiresome, the Duke of Richelieu ordered the cook to prepare something unusual from the available ingredients. Unable to obtain anything else, the cook decided to make a sauce based on vegetable oil. The sauce turned out exceptionally tasty and appealed to the French soldiers. It was named “mayonnaise” — in French, “mayonnaise,” meaning “of Mahon,” derived from the French spelling of the city’s name: “Mahon.”
